Sourced directly from the farm
We source our fresh seafood directly from Nishiki Market. In addition to using Edomae fish, we also
purchase "the most delicious sushi at the time," regardless of production area or brand, to ensure quality.
Wasabi from Izu
Wasabi is a MUST for sushi. We use "Matsuma Wasabi" grown in the spring water of Mt. Amagi directly from Izu.
"Matsuma Wasabi" is considered to be the best variety, because it takes time to carefully grow. It has an elegant taste with a good balance of stickiness, sweetness, spiciness, flavour, and colour that enhances the taste of sushi.
Wide selection of sashimi
The wide selection of sashimi that we serve here at Sushi Ichiban is something we take pride in.
Why limit yourself to the basic Salmon, Tuna, and Yellowtail when you can treat yourself to some Umi, Swordfish, Octopus, etc?
Effort and time placed into preparation
Preparation is the key to quality sushi. We don't just cut the fish, make the sushi, and serve it.
By applying techniques suited to each ingredient, we can enhance the compatibility with the sushi and bring out the flavour of the ingredients.
